Yamanashi pref. is located in the northern foot of Mt.Fuji. Hou-tou is a speciality there.
It is a local Udon noodle food, and the dish made with the noodle is also called the same name. It has been made by the local farmers there, where the ingredients are varied ineach home, however, pumpkin is usually a must. It looks like a stew dish containing a varieties of vegitables, and is seasoned with miso.
Recently, it has become a popular local dish listed in the menu of Japanese restaurants in Yamanashi pref, and also in cities such as Tokyo.
